Baby marrow and roasted pepper salad
Ingredients
- Baby marrow
- Red / Yellow Pepper
- Baby spinach
- Rocket
- Feta cheese
Method
- With a peeler cut the baby marrow into ribbons.
- Blanch and refresh the baby marrow ribbons.
- Roast the pepper whole.*
- Peal and deseed the roasted pepper and slice.
- Place the baby spinach and rocket on a plate. On top of that pack out the blanched baby marrow and roasted peppers.
- Crumble the feta over that.
*You can roast it on the fire, in the oven or over a gasstove flame. Once the pepper is blackened, peel or scrape off the charred skin, cut the pepper open and discard the seeds.
