Baby marrow and roasted pepper salad

Ingredients

  • Baby marrow
  • Red / Yellow Pepper
  • Baby spinach
  • Rocket
  • Feta cheese

Method

  • With a peeler cut the baby marrow into ribbons.
  • Blanch and refresh the baby marrow ribbons.
  • Roast the pepper whole.*
  • Peal and deseed the roasted pepper and slice.
  • Place the baby spinach and rocket on a plate. On top of that pack out the blanched baby marrow and roasted peppers.
  • Crumble the feta over that.

*You can roast it on the fire, in the oven or over a gasstove flame. Once the pepper is blackened, peel or scrape off the charred skin, cut the pepper open and discard the seeds.
