Butternut and baby spinach salad

Ingredients

  • Butternut
  • Baby spinach
  • Rocket
  • Feta cheese
  • Seeds (sunflower / flaxseeds / sesame seeds / pumpkin seeds)
  • Caramelised onions

Method

  • Steam or roast butternut cubes till soft
  • Toast the seeds in a pan till lightly brown (When they start turning brown take them out of the hot pan and spread onto a plate to stop the toasting process. Very brown seeds will taste bitter)
  • Place the baby spinach and rocket on a plate. On top of that pack out the cooked butternut caramelised onions.
  • Crumble the feta and sprinkle the toasted seeds over.
