Butternut and baby spinach salad
Ingredients
- Butternut
- Baby spinach
- Rocket
- Feta cheese
- Seeds (sunflower / flaxseeds / sesame seeds / pumpkin seeds)
- Caramelised onions

Method
- Steam or roast butternut cubes till soft
- Toast the seeds in a pan till lightly brown (When they start turning brown take them out of the hot pan and spread onto a plate to stop the toasting process. Very brown seeds will taste bitter)
- Place the baby spinach and rocket on a plate. On top of that pack out the cooked butternut caramelised onions.
- Crumble the feta and sprinkle the toasted seeds over.
