Ertjiesop met skaapvleis (pea and mutton soup)
Ingredients
- Stew mutton
- 1 Pack dry peas
- Large onion
- Celery
- Carrots
- Potatoes
- Stock cubes
Method
- Put the dry peas in a bowl and fill it with water, place aside.
- Cut of most of the fat. Salt the meat.
- Heat a big pot or pressure cooker with a small amount of oil.
- Seal and brown the meat.
- Add the diced onion and brown.
- Add the chopped celery. Also add the water. The water should cover the meat.
- Add 2 stock cubes.
- Boil till the meat is soft. - With a pressure cooker boil for 30 minutes.
- Take the meat out and debone, add the flaked meat back into the pot.
- Grate the carrots and potatoes and add it into the pot
- Drain the peas and add it into the pot
- Add add more water to cover everything.
- Boil until the peas are cooked (you need to stir the pot and top up the water regularly to prevent it from burning).
