Vietnamese Pho
Ingredients
- 1 x Onion
- 1 x Carrot
- 1 x Celery stalk
- Half chicken
- Chicken stock cube
- 3 star anise
- 1 cinnamon stick
- 1 tablespoon of seeds
- 2 garlic cloves
- 3 cm piece ginger
- 1 lemongrass stalk
- 1 tablespoon of sugar
- 1 tablespoon fish sauce
Method
- Add all the ingredients into a big pot and boil it until the chicken meat is softreenber to add a lot of water as this will become your broth.
- Strain the liquid into a bowl.
- Debone and shred the chicken.

Ingredients
- Broth
- Cooked chicken
- Rice noodles
- Carrot peeled into ribbons
- Mung bean sprouts
- Bunch of coriander leaves
- Chilli thinly sliced
- Spring onion sliced
- A few Mint leaves sliced
- Lemon wedges
- Fish sauce
Method
- Cook the rice noodles
- Bring the broth to the boil
- Dish the rice noodles and the chicken into bowls, ladle over boiling broth.
- Add carrot, sprouts, coriander, chilli, spring onion and mint.
- Season to taste with more fish sauce and lemon juice.
